<p>In our house the berry fan club is evenly split; my husband and youngest son love strawberries, whereas both myself and eldest 8 year old son enjoy raspberries more. Although I would never refuse fresh Perthshire strawberries, there is just something special about the sharp yet sweet juicy taste of just picked raspberries. They provide the greatest taste which can stand alone, be complimented simply with icing sugar and cream or become a star ingredient in any one of hundreds of traditional and modern recipes.</p>
<p>This delicate textured fruit can so easily be squidged in the hands of a toddler or adult alike and should be handled gently – store them in the fridge for just a few days or just spread them on a tray and freeze until solid before transferring them into a normal freezer storage container.</p>
<p>Raspberries are high in fibre, vitamins A and C, iron and potassium. They contain phytochemicals including beta-carotene to help fight against heart disease and an acid called ellagic which is linked to reducing the risk of cancer.</p>
<p>I had never been a big fan of the Scottish desert Crannachan until I was working in a well established Strathmore restaurant a few years ago. It was the oatmeal that did it, I wasn't a huge fan and tended just to opt for the sticky toffee pudding option if it was on the menu. However, Crannachan, when made correctly has a rounded rich and fresh flavour, and I have definitely been converted.</p>
<p>The biggest tip is to make sure you roast the oatmeal properly to release it's nutty flavour to complement the sweet honey, rich berries and rounded malt.</p>
<p>Also if you find your raspberries are a little sharp – sweeten with icing sugar to taste.</p>
<h2><strong>Traditional Crannachan </strong></h2>

<h3 sizcache="6" sizset="0"><strong>Ingredients </strong></h3>
<ul>
<li>1lb/500g raspberries </li>
<li>3oz/75g pinhead oatmeal </li>
<li>6 tbsp good malt whisky </li>
<li>3 tbs thick local Heather Honey </li>
<li>1pt/600 ml Double cream</li>
</ul>
<h3><strong>Method </strong></h3>
<ul>
<li>Spread oatmeal on a baking sheet and toast in a medium oven until crisp for 3-6 minutes, but be careful they don't burn. </li>
<li>Whilst the oatmeal cools whip the cream until it is thick but not stiff. </li>
<li>Blend half the raspberries (except 2 which are for decoration) until they form a smooth purée. </li>
<li>Fold gently the oatmeal, whisky, honey and cream and raspberries. </li>
<li>Place most of the remaining raspberries in the bottom of tall serving glasses, then spoon the mixture onto the raspberries. </li>
<li>Chill for an hour or two before serving. </li>
</ul>
<p><em>Just before serving, decorate with a few fresh raspberries and drizzled with a wee bit honey. </em></p>
